I have been eating Josephs's cookies for many years. I am not a diabetic, but I do look for low carbohydrate desserts and sweets, and these cookies are amongst the best tasting cookies in this category. They are fulfilling to eat unlike so many low carb sweets. I do wish that Joseph's would make more of the soft style cookies that they use to make. They were great. But these crunchy style cookies are still delicious.
