Product Description: J A Henckels Profession S Series 8" Chefs Knife 31021-203 - Henckels Professional 'S' knives feature the finest Henckels' blades, along with a two-piece handle held in place with three stainless steel rivets, for a sturdy, traditional look and feel. These knives are made in Solingen, Germany, and are forged, not stamped. Blade density is improved using the Henckels' FRIODUR ice-hardening process, which provides a sharper initial edge for easier maintenance over time. Larger knives are crafted using Henckels' exclusive Sinternal Component Technology, which fuses blade, bolster and tang into a single, seamless piece for precision, easy handling, and balance. Part of the Professional 'S' series, this knife is made of high-carbon stainless steel and precision-honed, with a laser-controlled edge, a balanced super-bolster, and a full tang that extends all the way through the handle. Made in Germany, Lifetime Warranty.
Amazon.com Review: This is a classic French chef's knife, with a broad blade and a curved cutting edge for rocking through a chopping task. The 8-inch blade suits most cooks, though those with small hands might prefer a 6-inch knife, and those with bigger hands might choose a 10-inch one. Classic three-rivet handles distinguish Pro S from Henckels's other quality lines, TwinStar, Five Star, and Four Star. Pro S handles are heavier and its knives less weight-forward. The steel used in the Pro S line is identical to that of the Five and Four Star lines. High-tech welding of knives this size and larger combines three steel types into what appears to be a single piece, so a knife's parts have distinct characteristics: a hard edge; a strong, stain-resistant bolster; and a stain- and corrosion-resistant tang. Traditionalists insist on single-piece forging for strength, but Henckels says the invisible welds are actually stronger than the steel. While this chef's knife is dishwasher-safe, hand washing is recommended. --Fred Brack

Rating: - Henckels 10-inch Chef's knife
This knife has 2 noticeable drawbacks:
1) Not as sharp as it can be right out of the box.
2) Spine edges are too sharp - sharp enough to cut yourself. I will have them smoothed out.
FYI: 8-inch chef's knife suffers from the same issues.
Also: 10-inch is exactly the same weight as 8-inch. The spine of 10-inch is noticeably thinner than the spine of the 8-inch. However, after using it I cannot say it is a drawback - the knife feels right, not too light, not too heavy. There is very little flex.
That being said knife does deserve a solid ... Read More
Rating: - A staple in my kitchen.
Henckels Twin Pro-S Chef's knifes are a staple in my kitchen. The 6 inch knife blade is my favorite. It is easy to hold, the weight and balance make preparing meals enjoyable and I feel like a professional. The edge stays sharp - Even though I should sharpen it more often than I do.
Rating: - Another great Henckel product.
My husband insisted on upgrading our knives and this is a very welcome addition to our kitchen. It has the capability of being able to be sharpened when it becomes necessary.
Rating: - Great Knife
I finally decided to get top quality knife, to replace my Chicago Cutlery 8"
chefs knife (I got tired of sharpening it every other week).
It was supposed to come 5 days after it shipped, but I got it in two, it came in a nice black box, sharp and ready for work.
So far I can tell you it is worth every penny, now I can do large volume of work with little effort. Chopping, dicing, slicing etc is easy due to the heftiness and sharpness of the knife. I remember watching a video on YouTube of some guy slicing a piece of paper in very thin horizontal strips with a Shun, well let me tell ... Read More
Rating: - Best gift ever
I got this knife as a wedding gift 7 years ago in a set and have been using it every day...at least twice a day and it is just the best! Only after 6 years did I need to use a stone to sharpen them. I really only needed the sharpening steel. I love to cook and this knife makes prep easier and faster. It is well balanced and solid to hold without being too heavy. The only thing i noticed about the blade is that when i slice turmeric it sometimes stains the blade...but it comes out after 3 days or so of using and washing (hand wash only). I highly recommend this knife.
