Product Description: The indentations on the side of the blade reduce the drag when cutting delicate food and prevent food from sticking to the blade. The blade is manufactured from high carbon stainless steel to prevent rusting and retain the sharp edge You will reach for this knife constantly for your day to day chopping and cutting needs. Master the art of dicing and slicing using this knife. The 7 inch Santoku is a versatile knife that uniquely combines the precision of a chef's knife and the power of a cleaver.
Amazon.com Review: This seven-inch santoku knife combines the precision of a Western chef’s knife and the power of a Chinese cleaver. It’s an essential in most Japanese homes as well as many professional kitchens. Great for chopping and dicing herbs or vegetables, the broad, straight blade also produces razor-thin and precise slices of sashimi, or any other fish, meat, or poultry. Oval-shaped indentations on each side reduce friction for a cleaner cut and help release food so that it falls away from the blade.
Chicago Cutlery’s new Forum line appeals to those who want to combine value, performance, and the sleek contemporary appearance of a seamless all-stainless design. Made from heavy-duty high-carbon stainless steel for rust and stain resistance, they feature forged blades for a leap in quality above cheaper stamped knives, yet cost much less than famous-name German knives. Chicago’s exclusive Taper Grind edge is razor-sharp and cuts with precision; these knives will need to be re-sharpened on a regular basis, but they take an edge beautifully and with maintenance can stay out-of-the-box sharp for years to come. The full tang extends from one end of the knife to the other for a superbly-balanced feel and added strength, while the heavy-duty forged bolster enhances safety. Ergonomically-designed stainless steel handles feel comfortable in the hand. They join seamlessly to the blade for an elegant high-tech look that enhances contemporary kitchen décor even as it provides few places for food and bacteria to hide. Chicago Cutlery covers their knives with a lifetime guarantee; they recommend hand-washing and drying for best results. --Mary Park

Rating: - Fine addition to my knife set
I have several Calphalon knives, and this was my first Chicago Cutlery knife. I'd been wanting a Santoku, and Amazon was offering this one on sale, so I went for it. I'm very pleased -- the balance is nice, and it's lightweight. I would definitely consider another knife from this manufacturer.
Rating: - Chicago "Forum" santuko knife
Very attractive appearance. Not particularly sharp right out of the box, but sharpens beautifully, and once sharpened handles/cuts almost as well as a similar knife from a top of the line name brand that cost almost six times as much on sale. Considering the price a much better value, and one does not have to be especially protective of it because it is not a major investment. I do put mine into the dishwasher with no adverse effect noticed, so long as I give it a few swipes on the sharpener every few uses.
Rating: - good gift
I got this for my brother - he loves it - it is good quality and a good price
Rating: - A good tool
I find this knife to be very useful on a daily basis. It's not the same shape as a traditional Japanese Santoku Knife, but it does what it's supposed to do.
I do suggest to follow the care guidelines, washing it by hand with a soaped cloth, shapring it every few uses, and so on. I also keep my knife stored in a leather case to keep the blade from being damaged.
Rating: - Perfect size and weight, multi-useful
I've had this knife for several weeks now, having originally purchased it with the Chicago Cutlery Forum knife set (see other review). This knife is the same quality as the other set. It did need to be toned with the toning rod that was included in my Forum set, but after that I've had no problems with it. I can slice extremely thin with this knife, which is impressive considering its size.
The heft and balance is spot-on, giving you the feeling of control you need. The solid construction gives it a nice aesthetic look and obviously goes perfectly with my other knives. I have ... Read More
