High-carbon stainless-steel blade ice-hardened for superior strength
Product Description: Part of the Four Star series, this Granton knife measures 10-in. and features a series of alternating oval wells in the blade that prevent meat from sticking and ensures even slices, from thick to thin. The knife is made of high-carbon stainless steel and precision-honed, with a laser-controlled edge, a balanced super-bolster, and a tang that extends to the back of the polypropylene handle, which is permanently bonded for seamless accuracy. J.A. Henckels has been manufacturing fine cutlery since 1731. Made in Solingen, Germany, its knives are forged, not stamped. Blade density is improved using the FRIODUR ice-hardening process, which provides a sharper initial edge for easier maintenance over time. Larger knives are crafted using Henckels' exclusive Sinternal Component Technology, which fuses blade, bolster and tang into a single, seamless piece for precision, easy handling, and balance. Amazon.com Review: The 10-inch specialty blade on this knife--sometimes called a Granton or Kullenschliff --features a ""hollow-ground"" edge specially designed for fine cutting duties. Air pockets develop in the hollows along the blade's edge, keeping even the thinnest-sliced meats from clinging to the blade. In addition to its superb meat-slicing abilities, this specialty knife is also great for slicing layer cakes and biscuit bases. Most of the Henckels lines--including the popular Four Star series--feature blades made of Friodur, a special, ice-hardened, no-stain steel created and patented by the company in 1939. This special formula was designed for exceptional hardness and high resistance to corrosion.
Founded in 1731, the J.A. Henckels company is not only one of the world's oldest cutlery manufacturers, it's also one of the most well respected, creating best-selling knives guaranteed to last a lifetime. --Kim Harwell

A Higher Standard in Knife Construction
Four Star® knives are precision forged from a single piece of exclusive-formula, high-carbon, no-stain steel under the all-new Sigmaforge standard. As a result, Four Star® knives have improved quality consistency, lasting sharpness, and perfect geometry. Sigmaforge one-piece construction also provides high precision and improved stability of the blade and steel structure, thus improving cutting-edge retention for lasting sharpness. In addition, Four Star® knives use J.A. Henckels’ Friodur ice hardening for corrosion resistance, a process that also contributes to cutting-edge retention.
It's All in The Grip:
The Four Star® series features high impact polypropylene handles that are permanently bonded to the knife blades without any gaps. These comfortable handles are break-proof, sanitary, and colorfast. In addition, the super bolster provides weight, insures safety, and adds balance.

Rating: - As good as I anticipated!
The first time I used this was to slice soporsato for the Superbowl....Excellent knife! I was able to slice this cured sausage diagonally, and with thin, even slices which can be really difficult. Love this knife....I look forward to many years of use with this knife!
Rating: - nice for cold stuff or halffrozen, but...
this is is really nice knieve and yes I can cut cheese with it so thin, awesome. Actually you can cut all very thin with a hard texture like parmesan, parma, half frozen stuff like tuna,
but don't try to get thin slices from warm filet! it just don't work. It's not sharp enough. So freeze it a little and then you can cut it thin enough, but its still a nice knieve, but you must get it way sharper!
Rating: - it replaces my electric slicer
I eat a lot of Italian cold cuts like prosciutto, which has to be sliced paper thin. Until I got this knife last year, I have been using an electric slicer (a commerical one like those in a deli) to do the job. With some practice, I can slice ham with this knife almost as thin as the machine and it is a lot easier to clean it then an electric slicer. I also use it to slice meat and fish often. The rounded tip makes it easy to work with, at least for me, because the sharp tip of a typical 10 inch slicer makes me nervous. Lastly, the blade is quite flexible and it took me a little while to get used ... Read More
Rating: - Great for big meat
This is an excellent knife given the right conditions. If you find yourself cooking large roasts of any sort, this is the knife to carve with.
This thing goes through prime rib like no other knife I've ever used. You want paper thin beef? Done. Big honking thick slices of beef? Done.
The one drawback of this knife is when you are slicing near bones. It's a pretty stiff knife and very long with a blunt tip. If you want to get the tender little bits from the bone, get another knife out, or plan on getting your hands dirty!
