I've used a bunch of fat separators over the years. This one really works. The key is the stopper and the way the spout enters the container. Almost no waste. I just wish they made a gallon one.

I requested a fat separator for Christmas (my old one cracked) and received this one from my Mom. I love the fact that it will hold a full 4 cups of liquid and it has a stopper that seems to make the fat rise to the top quickly. The soft grip handle is comfortable in my hand. Just put the pieces in the dishwasher and cleanup is a snap!
The only thing I don't like is the large holes in the strainer let small pieces of meat, skin, etc. slip down into the broth. To solve the problem, when I pour the broth out, I pour it through a fine wire mesh strainer.

I positively love my OXO fat separator! It holds a good amount of liquid, but not so much as to be difficult to pour. The lid helps strain out the solids, but if you want your broth to be absolutely clear, put a piece of cheesecloth over the lid.
IMPORTANT - the little black stopper MUST be inserted in the pouring spout before you add liquids to the cup or the fat will simply rise up in the spout. i was a little unsure about how this would work, but now i have seen the light! i make homemade chicken stock about once a week and this perfectly seperates the fat from the stock. no more skimming the pot! i could not be more pleased.

We use this more often for making homemade stocks than gravy, but it works great for both. I'm glad we got the 4 cup, because it works great for huge batches of chicken stock.
