Rating: - A favorite of a serious culinary knife collector
Based on the recommendation of my favorite cooking show and magazine, I bought this chef knife despite the fact that I have more than ten, everything from high priced Japanese to the very serviceable German Wusthofs. Plus, to date I've only purchased full tang, forged knives. To my very pleasant surprise this is turning out to be one of my favorites. I especially like it for fine chopping fresh herbs and makes a wonderful chiffinade with basil and other leafed herbs. Definitely worth the money. Not a lot of heft to the knife, but handle is comfortable and blade angle perfect.
Rating: - Nice sharp, balanced knife
This is a great knife. I now wish I had purchased the 8 inch one. The 10 inch sticks up out of my knife holder.
Rating: - The Sears Craftsman of knives
It doesn't have the heft or the feeling of luxury that I get from something like Henkels, but it has a nice, rigid blade, decent balance, comfortable grip, and it cuts nicely. Very easy to keep sharp with a steel. In other words, it is functionally absolutely correct, if not luxurious.
For 1/3 the price, I'll skip luxurious. This is my traveling knife for cooking while visiting friends with less-well-equipped kitchens or doing demos (in my home kitchen, I have a mix of Henkels, Wuesthoff, and some Chinese cleavers), and I'll certainly add a few others to my kit.
Rating: - Will not hold an edge
I had high hopes, but low expectations with this knife. High hopes because it's done well in Cook's Illustrated reviews for years, and it's gotten great reviews on Amazon, but low expectations because I've worked in commercial kitchens with crappy knives for about 8 years now, and this knife is very similar in look and feel to the knives I've used for the last 8 years. I figured I'd give this one a shot and if it didn't work out, well, I'm only out 30 bucks. And it definitely lived up to my expectations- mainly that it will not hold an edge. At all. The knives we use where I currently work are sent ... Read More
