Mercer Cutlery Genesis 3-1/2-Inch Paring Knife
These knives are wonderful. We purchased 2 after reading about them in Cook's Illustrated. Now I'm back for an additional boning and bread knife. They handle well, hold an edge, and are very affordable.
Rating: - Just the right size
I have been looking for a meat fork this size for a long time. It is easy to handle and substantial weight without having tines that were ridiculously long. A good buy.
Rating: - Excellent paring knife
I received this paring knife after sampling and handling Wusthof Classic and a variety of J.A. Henkel knives. The Mercer has a different gripping (a special polymer rubber) which feels perfect in your hand and gives absolutely nothing up to either the Wusthof or the Henkel. Most culinary schools and many chefs swear by these. Highly recommended.
