Otherwise Classic knives are identical to other Wüsthof knives, embodying all the virtues that have earned the German manufacturer world renown. The principal parts of a Wüsthof knife--blade, bolster, and tang--are forged from a single piece of high-carbon stainless steel, and the blade is precisely tapered from bolster to tip and from back to hand-honed edge. The blades and beautifully formed bolsters are not as thick as on some knives. As a result, despite their heft, strength, and durability, Wüsthof knives are pleasingly delicate and marvelously balanced in action.
This 7-inch santoku is a Japanese cook's (or chef's) knife, featuring a low-tip style with a broad blade. The cutting edge is minimally curved, so it provides less rocking action than a European-style cook's knife. For straight-down slicing and precise chopping, however, it's superb. Alternating hollows on each side of the blade create air pockets, allowing slices to fall away cleanly. This knife should be hand washed. --Fred Brack

Rating: - Great knife- don't deny yourself
I love to cook and have been doing so with a knife set I've had for years...I finally decided to get one good knife and this one is it! I had no idea cutting things was so easy! It is a good size for me (I am 5'10) as it is not too small for my hands or too big either. It literally falls thru the veggies and meat too- a good all around knife. If you can only afford one knife, this one would be a good choice. Don't deny yourself any longer- the price is worth it.

The classic Wusthof knives are the best I have ever used, and the santoku knives are my favorite.
Rating: - A really sharp knife
I love my knives and this is fast becoming a favorite. I wish it were a little larger - I'm used to my larger French Knife. It is also very sharp - cut through my fingernail with little resistance (remember the advice to keep fingers bent toward your palm when chopping?). Although it would not be my choice for an only knife, it would be near the top.

Knife is great, but ordering experience not so. Received a double order and had to pay shipping and handling back to vendor in Canada. They wouldn't waive the handling fee. I have no clue how I could have double-ordered, and I've been ordering off the web for years. Order must not have good "confirmation" pane after placing order.

I bought this as a Chritmas present for my son-in-law based on it's good reviews. We both tried it out on Christmas dinner with lots of prep work. It slices through hard veggies like carrots amazingingly well. This is a five star product!
